Chao

Chao
300g tofu
1/2 tbsp chilli powder
1 part salt
3 part water 
1 part rice wine


 

Blanche tofu, remove and leave rest in a colander with a  piece paper towel on top, then put something heavy on the tofu for 30 mins only
Cut tofu into small pieces, slightly dip 4 sides (except top and bottom) into chilli powder.
Put a piece of paper towel on a plate, rest the tofu pieces with the side has chilli powder on the paper towel.
Put another piece of paper towel on top. Cover tightly with foil.
Leave in warm place for 2 days.
Check if the tofu has yellow patch, if yes then gently place the tofu in a clean glass jar. 
If the tofu has green or blue spots then discard them the have gone bad. 
Mix water, salt, wine well then add to the jar.
Leave in the fridge for at least one week before consumming.
